I made Chicken Enchiladas for dinner on Monday night. I've made several different recipes for Chicken Enchiladas but never one that tasted quite like these. They were so yummy.
I made this recipe I found on Pinterest: Chicken Enchiladas
and then made this Restaurant Salsa on the side from Pioneer Woman (never can go wrong with her recipes). The salsa makes a large amount so I froze half of it...we'll see how it tastes after I thaw it the next time I need it.
Oh and the chicken I used was from when I stretched a chicken last week.
I'm hoping to make these banana bars today or tomorrow. Looks like a great way to use up some brown bananas.
I'm also making this crockpot porkchop recipe today for supper. Can't wait to see how it turns out!
