Granola Bar recipe from a friend. I'm posting it here so I can find it when I need it.
2 cups rolled oats
3/4 cup packed brown sugar
1/2 cup wheat germ (i use flax seed)
3/4 tsp ground cinnamon
1 cup all purpose flour
3/4 cup raisins (opt, i use chocolate chips)
3/4 tsp salt
1/2 cup honey
1 egg, beaten
1/2 cup vegetable oil (i use coconut oil melted)
2 tsp vanilla extract
Preheat oven to 350 degrees F. Generously grease 9x13 baking pan.
In large bowl, mix together the oats, brown sugar, wheat germ, cinnamon, flour, raisins and salt. Make a well in the center and pour in honey, egg, oil and vanilla. Mix well using your hands. Pat the mixture evenly into prepared pan. Bake 30-35 min in preheated oven, until the bars begin to turn golden at the edges. Cool 5 min, then cut into bars while still warm. Do not allow the bars to cool completely before cutting, or they will be too hard to cut. I think these taste better when you smash them really flat and as hard as you can into the pan. They also save better, the thinner the bar, the better! We usually make a double portion and freeze the other half because they come back to life really quick in the microwave.
